For a seafood Xmas spread
When it comes to curating fruits of the sea, a sweet, effervescent aperitif will be a fabulous match on the beverage front. A seat around your Chrissy table will be of high demand with a tyranny of fresh, delicious seafood and this blushing, citrusy spritz. It’s also REALLY easy. Trust our word.
You’ll need:
- ¾ cup of passionfruit juice – chilled
- ¼ cup of Aperol
- A really generous slash of fresh lime juice
- 1 bottle of the Jericho Rosé, plucked from our Pretty Pinks pack
- Ruby red grapefruit wedges (for serving)
- A bottle of soda water – to top up each glass
- Lotsa ice – to serve
Here’s how:
Chill approx 6 tall wine goblets in the fridge. Combine the passionfruit juice, Aperol, fresh lime juice and rosé, then pour into each glass, add ice cubes and top with soda water until the glasses are full to the brim. Bruise the ruby red grapefruit wedges so they release a little flavour, drop them in and give it a big ol’ stir. Presto – you’re done!

For the tradish Christmas spread

Tables swathed with delicious meats, fantastical salads and mountainous pavlovas with fresh, vibrant fruits will be best revered with what we like to call ‘Santa’s Sangria’ in very close proximity. Attempt to crack a bonbon, get your paper party hat on and let it flow, let it flow, let it flow.

- 1 green apple or green pear – finely sliced
Here’s how:
Add fresh fruit to a large pitcher. Combine all the remaining ingredients separately, then add to fresh fruit and stir to combine. Then, simply refrigerate until cold. Prepare the sangria ahead of time if possible, up to a full day before serving! Pour into tumblrs and watch your relatives sing your praise.

Boxing Day Imbibing
The best way to remedy a monolithic alcohol and food hangover? More food, sunshine, good company and a continuum of copious grapefruit and basil gin cocktails. Because let’s be honest, you probably need something relatively fresh and light after a full day of indulgence. If you’re braving the shops, consider this the most soothing of post-spree pours. Throw on some shades and nurse one of these smooth antidotes.
You’ll need:
- A decent sprig of basil leaves
- 1 pink grapefruit – sliced
- 30ml of gin – per glass
Here’s how:
Fill a large balloon glass or hi-ball with ice. Pour the gin over ice. Top up with tonic. Garnish with the pink grapefruit and basil leaves. DELISH!
